Ingredients
- 1 cup flour
- 1 scoop of unflavoured pea protein
- 1/2 teaspoon baking powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garlic powder
- 1 cup water
- 1/4 cup finely chopped red onion
- 1/4 cup chopped spinach
- 1/4 cup choppd carrot
- Olive oil (for cooking)
DIRECTIONS
- Whisk together flour, unflavoured pea protein baking powder and seasonings
- Gradually add water to the mixture, whisking until a smooth batter forms similar to pancake batter.
- Fold in the red onion, grated carrot and spinach
- Heat a pan over medium heat and lightly grease with oil.
- Pour 1/4 cup onto the pan and spread into a circular shape.
- Cook for 2-3mins on each side or until golden brown and cooked through.
- Repeat with the remaining batter, adding more oil as needed.
